Ingredients

Scale

For the Potato Base:

3 cups Yukon Gold potatoes, cubed

1 tablespoon olive oil

½ teaspoon salt

½ teaspoon smoked paprika

½ teaspoon garlic powder

For the Ground Beef Mixture:

1 lb ground beef (80/20)

½ cup finely diced yellow onion

1 teaspoon garlic powder

1 teaspoon smoked paprika

1 tablespoon Worcestershire sauce

1 teaspoon Dijon mustard

¾ teaspoon salt

½ teaspoon black pepper

Toppings (Customize to taste):

1 cup shredded lettuce

½ cup diced tomatoes

¼ cup sliced red onions

½ cup pickles

¼ cup shredded cheddar cheese

2 tablespoons burger sauce (or sauce of choice)

Instructions

  • Prepare the Potatoes:
Preheat oven to 425°F (220°C). Toss cubed potatoes with olive oil, salt, garlic powder, and smoked paprika. Spread on a lined baking sheet. Roast for 25–30 minutes, flipping halfway through, until golden and crispy.

  • Cook the Ground Beef:
Heat a skillet over medium-high heat. Add diced onions and sauté until softened, about 2–3 minutes. Add the ground beef, breaking it up with a spatula. Cook until browned, then stir in garlic powder, paprika, Worcestershire sauce, Dijon mustard, salt, and pepper. Cook for another 2–3 minutes until fully combined and cooked through.

  • Assemble the Bowls:
Divide roasted potatoes between 4 bowls. Top each with seasoned beef, lettuce, tomatoes, onions, pickles, shredded cheese, and a drizzle of burger sauce.

  • Serve:
Enjoy warm. Optional: customize with bacon, avocado, jalapeños, or a fried egg!

Notes

For a low-carb version, swap potatoes with roasted cauliflower or zucchini.

Make it vegan by using lentil or black bean patties and dairy-free toppings.

This recipe is great for meal prep—store components separately and reheat as needed.
