- 2 boneless, skinless chicken breasts (about 1 lb), cut into bite-sized pieces
- 2 cups Ditalini pasta (or any small pasta of choice)
- 1 tablespoon olive oil
- 3 garlic cloves, minced
- 1 medium onion, chopped
- 2 medium carrots, peeled and diced
- 2 cups chicken broth
- 1 can (14.5 oz) diced tomatoes, drained
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Freshly grated Parmesan cheese (optional, for garnish)
- Fresh parsley, chopped (optional, for garnish)
Instructions
- Sauté the chicken: Heat olive oil in a large skillet over medium heat. Add the chicken pieces and cook for 6-8 minutes, or until browned and cooked through. Remove the chicken from the skillet and set aside.
- Sauté the vegetables: In the same skillet, add the garlic and onion, cooking for 2-3 minutes until fragrant and soft. Add the carrots and cook for another 3 minutes.
- Combine: Pour in the chicken broth and diced tomatoes, then stir in the oregano, basil, salt, and pepper. Bring to a simmer for 5 minutes, allowing the vegetables to soften.
