- ½ cup chocolate protein powder
- ¼ cup unsweetened cocoa powder
- ¼ cup honey or maple syrup
- ¼ cup melted coconut oil
- ½ tsp vanilla extract
- ¼ cup almond butter or peanut butter
- ¼ tsp salt
- ¼ cup dark chocolate chips (optional)
- ¼ cup chopped nuts (almonds, walnuts, or pecans, optional)
Instructions
- Preheat oven to 325°F (163°C) and line a baking sheet with parchment paper.
- Mix dry ingredients: In a large bowl, combine oats, protein powder, cocoa powder, and salt.
- Combine wet ingredients: In a separate bowl, whisk together melted coconut oil, honey (or maple syrup), almond butter, and vanilla extract.
- Mix everything together: Pour the wet mixture over the dry ingredients and stir until well coated.
- Spread on baking sheet: Evenly spread the granola mixture on the prepared baking sheet.
- Bake for 18-22 minutes, stirring halfway through, until crisp and lightly golden.
- Cool completely before adding chocolate chips and nuts (if using).
- Store in an airtight container for up to 2 weeks.
