  • 1 lb medium shrimp, peeled and deveined
  • 1 cup all-purpose flour
  • 1 cup panko breadcrumbs
  • 2 large eggs, beaten
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Vegetable oil (for frying)

For the Slaw:

  • 2 cups shredded cabbage
  • 1/4 cup shredded carrots
  • 1/4 cup chopped cilantro
  • 2 tbsp lime juice
  • 1 tbsp olive oil
  • Salt and pepper to taste

For the Sauce:

  • 1/4 cup mayonnaise
  • 1 tbsp sriracha or hot sauce
  • 1 tbsp lime juice
  • 1 tsp honey

For Serving:

  • 8 small corn or flour tortillas
  • Lime wedges (optional)

Instructions

  • Prepare the Slaw:
    • In a bowl, mix shredded cabbage, carrots, cilantro, lime juice, olive oil, salt, and pepper. Set aside.
  • Make the Sauce:
    • Whisk together mayonnaise, sriracha, lime juice, and honey in a small bowl. Refrigerate until ready to serve.
  • Bread the Shrimp:
    • Mix flour, garlic powder, paprika, salt, and pepper in a bowl.
    • Coat shrimp in the flour mixture, dip in beaten eggs, and then coat with panko breadcrumbs.

Notes

  • For a lighter option, air fry or bake the shrimp at 400°F (200°C) for 10–12 minutes.
