- 1 cup all-purpose flour
- 1 cup panko breadcrumbs
- 2 large eggs, beaten
- 1 tsp garlic powder
- 1 tsp paprika

- 1/2 tsp black pepper
- Vegetable oil (for frying)
For the Slaw:
- 2 cups shredded cabbage
- 1/4 cup shredded carrots
- 1/4 cup chopped cilantro
- 2 tbsp lime juice
- 1 tbsp olive oil
- Salt and pepper to taste
For the Sauce:
- 1/4 cup mayonnaise
- 1 tbsp sriracha or hot sauce
- 1 tbsp lime juice
- 1 tsp honey
For Serving:
- 8 small corn or flour tortillas
- Lime wedges (optional)
Instructions
- Prepare the Slaw:
- In a bowl, mix shredded cabbage, carrots, cilantro, lime juice, olive oil, salt, and pepper. Set aside.
- Make the Sauce:
- Whisk together mayonnaise, sriracha, lime juice, and honey in a small bowl. Refrigerate until ready to serve.
- Bread the Shrimp:
- Mix flour, garlic powder, paprika, salt, and pepper in a bowl.
- Coat shrimp in the flour mixture, dip in beaten eggs, and then coat with panko breadcrumbs.
Notes
- For a lighter option, air fry or bake the shrimp at 400°F (200°C) for 10–12 minutes.
- Customize toppings with avocado slices, pickled onions, or crumbled queso fresco.
