- ½ cup pecans
- ¼ cup sunflower seeds
- ½ cup honey (or maple syrup)
- ⅓ cup melted coconut oil
- 1 tsp vanilla extract
- 1 tsp cinnamon
- ¼ tsp sea salt
- ½ cup dried cranberries (or raisins, chopped apricots, etc.) (add after baking)
Instructions
Preheat the oven to 325°F (163°C) and line a baking sheet with parchment paper.
2️⃣ Mix dry ingredients: In a large bowl, combine the oats, almonds, pecans, sunflower seeds, cinnamon, and salt.
3️⃣ Combine wet ingredients: In another bowl, whisk together the honey (or maple syrup), melted coconut oil, and vanilla extract.
4️⃣ Coat the oats: Pour the wet mixture over the dry ingredients and mix until evenly coated.
5️⃣ Spread on a baking sheet: Press the mixture into an even layer for consistent baking.
6️⃣ Bake for 20-25 minutes, stirring halfway through to ensure even toasting.
7️⃣ Cool completely before stirring in dried fruit.
8️⃣ Store properly: Keep in an airtight container for up to 2 weeks at room temperature or 3 months in the freezer.
Notes
- For bigger clusters, press the granola mixture firmly before baking and avoid stirring too much.
- For extra crunch, whisk and add one egg white to the mixture before baking.
- Dried fruit burns easily, so always add it after baking.
- Store in an airtight container to keep it fresh and crisp.
