  • 8 oz fusilli pasta
  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 1 bell pepper, diced
  • 1 cup tomatoes, chopped
  • 1/2 cup coconut milk
  • 1 tbsp curry powder
  • 1/2 tsp cumin
  • 1/2 tsp turmeric
  • 1/4 tsp chili powder (optional)
  • Salt and pepper to taste
  • Fresh cilantro (for garnish)

Instructions

  • Sauté vegetables: Heat olive oil in a pan over medium heat. Add chopped onion and bell pepper, cooking until soft (about 5 minutes).
  • Prepare the sauce: Add chopped tomatoes to the pan and cook for 2-3 minutes. Stir in curry powder, cumin, turmeric, and chili powder. Cook for another 2 minutes until the spices become fragrant.

Notes

  • Adjust the spice level by adding more chili powder or using milder curry powder.
  • For a vegetarian version, omit any meat and add more vegetables like peas or spinach.
