- 8 oz fusilli pasta
- 1 tbsp olive oil
- 1 onion, finely chopped
- 1 bell pepper, diced
- 1 cup tomatoes, chopped
- 1/2 cup coconut milk
- 1 tbsp curry powder
- 1/2 tsp cumin
- 1/2 tsp turmeric
- 1/4 tsp chili powder (optional)
- Salt and pepper to taste
- Fresh cilantro (for garnish)
Instructions
- Sauté vegetables: Heat olive oil in a pan over medium heat. Add chopped onion and bell pepper, cooking until soft (about 5 minutes).
- Prepare the sauce: Add chopped tomatoes to the pan and cook for 2-3 minutes. Stir in curry powder, cumin, turmeric, and chili powder. Cook for another 2 minutes until the spices become fragrant.
Notes
- Adjust the spice level by adding more chili powder or using milder curry powder.
- For a vegetarian version, omit any meat and add more vegetables like peas or spinach.
