- 1 cup (240g) peanut butter
- 1/2 cup (100g) granulated sugar
- 1/2 cup (110g) brown sugar
- 1 ½ cups (180g) all-purpose flour
- 1 tsp (5g) baking soda
- ¼ tsp (1g) salt
- 1 large egg
- ½ cup (115g) butter, softened
- 1 tsp (5ml) vanilla extract
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
- Add the peanut butter and egg to the mixture and blend well.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until fully incorporated.
- Stir in the vanilla extract.
- For a classic look, scoop the dough into 1-inch balls and place them on a parchment-lined baking sheet. Press each ball with a fork to create a crisscross pattern.
- Bake for 10-12 minutes, or until the edges are golden brown.
- Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- For a softer dough, you can chill it in the fridge for 30 minutes before baking.
- For a gluten-free version, substitute the all-purpose flour with a gluten-free flour blend.
- You can freeze the dough for up to 3 months. Just scoop the dough onto a baking sheet, freeze it, and then transfer it to a freezer bag.
