Description

This Banana Pudding Bundt Cake is a delightful twist on traditional banana pudding. With its moist texture and rich banana flavor enhanced by a hint of pudding, it’s the perfect dessert to impress family and friends at any gathering.

Ingredients

Scale
  • Dry Ingredients:

    • 2 cups all-purpose flour
    • 1 cup granulated sugar
    • 1 teaspoon baking soda
    • ½ teaspoon salt
    • Optional: 1 packet (3.4 oz) instant banana pudding mix
  • Wet Ingredients:

    • ½ cup vegetable oil
    • 2 large eggs
    • 3 overripe bananas, mashed (about 1 cup)
    • ½ cup sour cream
    • 1 teaspoon vanilla extract
  • For Finishing:

    • Powdered sugar for dusting (optional)
    • Whipped cream or caramel drizzle for serving (optional)

Instructions

  • Preheat & Prepare:
Preheat your oven to 350°F (175°C). Grease and lightly flour a bundt pan to ensure easy release.

  • Mix Wet Ingredients:
In a large bowl, whisk together the vegetable oil, eggs, mashed bananas, sour cream, and vanilla extract until smooth.

  • Combine Dry Ingredients:
In another bowl, sift the all-purpose flour, granulated sugar, baking soda, salt, and (if using) the instant banana pudding mix.

  • Combine Batter:
Gradually add the dry ingredients to the wet ingredients. Stir gently until just combined—be careful not to overmix to maintain a tender crumb.

  • Bake:
Pour the batter evenly into the prepared bundt pan. Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted in the center comes out clean.

  • Cool & Serve:
Allow the cake to cool in the pan for about 10 minutes before inverting onto a cooling rack. Dust with powdered sugar or top with whipped cream/caramel drizzle, if desired.

Notes

  • Banana Tip: Use very ripe bananas for an extra boost of natural sweetness and flavor.
  • Mixing Caution: Stir the batter gently to avoid overmixing, which can lead to a denser cake.
  • Serving Ideas: Serve warm or at room temperature. A dollop of whipped cream or a light caramel drizzle can elevate the flavor even more.
  • Storage: Keep leftovers in an airtight container at room temperature for up to 3 days.
