Air Fryer Cottage Cheese Egg Bites

These air fryer cottage cheese egg bites are fluffy, high in protein, and perfect for meal prep. Quick to make, customizable, and keto-friendly, they’re a delicious and healthy breakfast or snack option!

Ingredients
  

  • 5 large eggs
  • cup 2% cottage cheese
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup shredded cheddar feta, or Gruyère cheese
  • ¼ cup baby spinach chopped
  • 3 tablespoons minced onion
  • Optional: 1–2 ground sausage or regular ground beef

Method
 

  1. Blend the egg mixture – In a blender, combine eggs, cottage cheese, salt, and pepper. Blend on high for 20–30 seconds until smooth.
  2. Prepare the muffin cups – Place silicone muffin cups in the air fryer basket. Evenly distribute the cheese, spinach, onion, and any optional mix-ins.
  3. Fill the cups – Pour the blended egg mixture into each muffin cup, filling about ¾ of the way full. Stir gently to combine mix-ins.
  4. Cook in the air fryer – Set the air fryer to 290°F (145°C) and air fry for 12–15 minutes until puffed up and set.

  6. Cool and serve – Let the egg bites cool for a minute before removing them from the cups. Enjoy immediately or store for later.
