  • Shrimp shells: 1 to 1.5 pounds
  • Water: 8-10 cups
  • Onion: 1 medium halved
  • Ginger: 3-4 slices 2 inches thick
  • Star anise: 2-3 whole pieces
  • Cinnamon stick: 1 stick
  • Cloves: 2-3 whole cloves
  • Fish sauce: 1 tablespoon
  • Rock sugar: 1 tablespoon
For the Pho:
  • Shrimp: 1 pound peeled and deveined
  • Rice noodles: 8-10 ounces
  • Fresh basil leaves: 1 cup
  • Fresh cilantro: 1/2 cup
  • Fresh mint leaves: 1/2 cup
  • Bean sprouts: 1-2 cups
  • Lime: 1-2 limes cut into wedges
  • Chili peppers: 1-2 thinly sliced (optional)
Optional Garnishes:
  • Hoison sauce: 1-2 tablespoons
  • Sriracha sauce: 1-2 tablespoons
  • Fried shallots: 1/4 cup

Method
 

  1. Simmer shrimp shells with aromatics and spices to create a rich broth.
  2. Cook rice noodles according to package instructions.
  3. Add shrimp to the broth and cook until pink.
  4. Assemble pho by placing noodles in a bowl, topping with shrimp, and pouring over the broth.
  5. Garnish with fresh herbs, lime, bean sprouts, and chili peppers, and enjoy!
