For the Potato Base:
  • 3 cups Yukon Gold potatoes cubed
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
For the Ground Beef Mixture:
  • 1 lb ground beef 80/20
  • ½ cup finely diced yellow onion
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • ¾ teaspoon salt
  • ½ teaspoon black pepper
Toppings (Customize to taste):

  • 1 cup shredded lettuce
  • ½ cup diced tomatoes
  • ¼ cup sliced red onions
  • ½ cup pickles
  • ¼ cup shredded cheddar cheese
  • 2 tablespoons burger sauce or sauce of choice

Method
 

  1. Prepare the Potatoes:Preheat oven to 425°F (220°C). Toss cubed potatoes with olive oil, salt, garlic powder, and smoked paprika. Spread on a lined baking sheet. Roast for 25–30 minutes, flipping halfway through, until golden and crispy.
  2. Cook the Ground Beef:Heat a skillet over medium-high heat. Add diced onions and sauté until softened, about 2–3 minutes. Add the ground beef, breaking it up with a spatula. Cook until browned, then stir in garlic powder, paprika, Worcestershire sauce, Dijon mustard, salt, and pepper. Cook for another 2–3 minutes until fully combined and cooked through.
  3. Assemble the Bowls:Divide roasted potatoes between 4 bowls. Top each with seasoned beef, lettuce, tomatoes, onions, pickles, shredded cheese, and a drizzle of burger sauce.
