Ingredients
  

  • 1 lb shrimp peeled and deveined
  • 8 oz pasta gluten-free if preferred
  • 1 tbsp Cajun seasoning adjust to taste
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1 onion chopped
  • 1 bell pepper chopped
  • 1 can 14 oz diced tomatoes, drained
  • 2 cloves garlic minced
  • Fresh parsley chopped for garnish

Method
 

  1. Season the Shrimp: In a bowl, toss shrimp with Cajun seasoning, garlic powder, paprika, and a pinch of salt and pepper.
  2. Sauté the Shrimp: Heat olive oil in a large skillet over medium-high heat. Cook shrimp for 2-3 minutes per side until pink and opaque. Remove from the skillet and set aside.
  3. Make the Sauce: In the same skillet, sauté onions and bell peppers until softened. Add diced tomatoes, garlic, and the remaining Cajun seasoning, cooking for another 2-3 minutes.
