  • 2 Delmonico steaks about 1.25 to 1.5 inches thick
  • 2 tbsp olive oil
  • 1 tbsp unsalted butter
  • 3 cloves garlic minced
  • 1 tsp sea salt
  • 1 tsp black pepper
  • 1 tsp fresh thyme leaves
  • ½ tsp smoked paprika optional
  • 1 tsp Worcestershire sauce

Method
 

  1. Preheat the oven to 400°F (204°C). Let the steaks rest at room temperature for 30 minutes before cooking.
  2. Pat steaks dry with a paper towel. Season generously with salt, pepper, and smoked paprika.
  3. Heat olive oil in a cast-iron skillet over medium-high heat. Sear the steaks for 2–3 minutes per side until a golden crust forms.
  4. Add butter, garlic, thyme, and Worcestershire sauce to the pan. Spoon the mixture over the steaks for 30 seconds.
  5. Transfer the skillet to the preheated oven. Roast for 5–7 minutes for medium-rare, or longer depending on your preferred doneness.
  6. Remove steaks, cover loosely with foil, and rest for 5–10 minutes before slicing and serving.
