  • Boneless skinless chicken breast or thighs: 2 pieces about 450 g / 1 lb, diced
  • Olive oil: 2 tablespoons
  • Onion: 1 medium finely chopped
  • Garlic: 3 cloves minced
  • Carrots: 2 medium diced
  • Celery: 2 stalks diced
  • Frozen peas: 1 cup
  • Chicken broth low sodium: 4 cups
  • Heavy cream: 1 cup
  • Parmesan cheese: ½ cup grated
  • Dried thyme: 1 teaspoon
  • Dried basil: 1 teaspoon
  • Salt: to taste
  • Black pepper: to taste
  • Fresh parsley or cilantro: 2 tablespoons chopped (for garnish)

Method
 

  1. Sauté the vegetables: Cook diced onions, carrots, and celery in olive oil until soft. Add garlic and cook until fragrant.
  2. Add chicken: Stir in diced chicken and cook until browned.
