Ingredients
  

  • 2 ½ cups rolled oats
  • ½ cup almond butter or peanut butter
  • ¼ cup honey or maple syrup
  • ¼ cup coconut oil melted
  • ¼ cup brown sugar
  • ½ cup mixed nuts almonds, walnuts, or cashews, chopped
  • ¼ cup seeds sunflower or pumpkin
  • ¼ cup dried fruits raisins, cranberries, or apricots, chopped
  • ½ tsp vanilla extract
  • ¼ tsp salt
  • ½ tsp ground cinnamon optional

Method
 

  1. Preheat your oven to 350°F (175°C) and line a baking dish with parchment paper.
  2. In a large bowl, combine the rolled oats and chopped nuts.
  3. In a small saucepan, heat the honey (or maple syrup), nut butter, brown sugar, vanilla extract, and salt over low heat until melted and combined.
  4. Pour the wet ingredients over the dry mixture and stir until everything is well coated.
  5. Press the mixture firmly into the prepared baking dish. For added texture, sprinkle chocolate chips or dried fruit on top if desired.
  6. Bake for 12-15 minutes, or until the edges are golden and the center is firm.
  7. Let the bars cool completely in the pan before cutting them into squares or rectangles.
  8. Store in an airtight container at room temperature for up to 1 week.
