Ingredients
  

  • 8 oz fusilli pasta
  • 1 tbsp olive oil
  • 1 onion finely chopped
  • 1 bell pepper diced
  • 1 cup tomatoes chopped
  • ½ cup coconut milk
  • 1 tbsp curry powder
  • ½ tsp cumin
  • ½ tsp turmeric
  • ¼ tsp chili powder optional
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Method
 

  1. Sauté vegetables: Heat olive oil in a pan over medium heat. Add chopped onion and bell pepper, cooking until soft (about 5 minutes).
  2. Prepare the sauce: Add chopped tomatoes to the pan and cook for 2-3 minutes. Stir in curry powder, cumin, turmeric, and chili powder. Cook for another 2 minutes until the spices become fragrant.
