  • 1 lb 450g large shrimp, peeled and deveined
  • 2 tablespoons olive oil for cooking shrimp
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 ripe mango peeled and diced
  • ½ pineapple peeled, cored, and diced
  • 1 ripe avocado pitted and sliced
  • 4 cups mixed greens e.g., Romaine, Butter lettuce, or spinach
  • ¼ cup red onion thinly sliced
  • ¼ cup fresh cilantro chopped
For the Dressing:
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lime juice
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • ¼ teaspoon ground cumin optional
  • Salt and pepper to taste

Method
 

  1. Cook shrimp in olive oil, seasoned with salt and pepper, until pink and opaque.
  2. Prepare the tropical fruits (mango, pineapple, avocado) and vegetables (greens, red onion, cilantro).
  3. Make the dressing with olive oil, lime juice, honey, mustard, and cumin.
