- Preheat Your Oven: Set to 350°F (175°C) and prepare your loaf pan with parchment paper or oil.
- Grate the Zucchini : Use a box grater. Squeeze out moisture with a towel.
- Mix Wet Ingredients : In a large bowl, whisk eggs, oil, honey/maple syrup, and vanilla until smooth.
- Combine Dry Ingredients : In another bowl, mix flour, baking powder, baking soda, salt, cinnamon, and xanthan gum (if needed).
- Blend Together : Fold dry ingredients into the wet. Add zucchini and optional mix-ins. Do not overmix.
- Bake: P our into the pan and bake for 50–60 minutes. Check with a toothpick.
- Cool and Slice : Let cool 10–15 minutes in pan, then transfer to a rack. Slice and enjoy.
