Moist and Delicious Gluten-Free Zucchini Bread Recipe – Super Easy & Healthy

A moist, naturally sweetened zucchini bread made with olive oil or coconut oil and gluten-free flour. Perfect for a healthy breakfast or snack customize with nuts or chocolate chips!

Ingredients
  

  • 2 medium zucchinis grated and excess water squeezed out
  • 3 large eggs room temperature
  • 1/2 cup olive oil or coconut oil
  • 1/2 cup honey or pure maple syrup
  • 1 teaspoon vanilla extract
  • 2 cups gluten-free flour blend
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon optional
  • 1/2 cup chopped walnuts pecans, or chocolate chips (optional)

Equipment

  • 9×5-inch loaf pan (23×13 cm)
  • Parchment paper or oil for greasing
  • Grater
  • 2 mixing bowls
  • Whisk
  • Rubber spatula
  • Cooling rack

Method
 

  1. Preheat Your Oven: Set to 350°F (175°C) and prepare your loaf pan with parchment paper or oil.
  2. Grate the Zucchini : Use a box grater. Squeeze out moisture with a towel.
  3. Mix Wet Ingredients : In a large bowl, whisk eggs, oil, honey/maple syrup, and vanilla until smooth.
  4. Combine Dry Ingredients : In another bowl, mix flour, baking powder, baking soda, salt, cinnamon, and xanthan gum (if needed).
  5. Blend Together : Fold dry ingredients into the wet. Add zucchini and optional mix-ins. Do not overmix.
  6. Bake: P our into the pan and bake for 50–60 minutes. Check with a toothpick.
  7. Cool and Slice : Let cool 10–15 minutes in pan, then transfer to a rack. Slice and enjoy.
