  • 4 boneless skinless chicken breasts (about 1.5 lbs / 680g)
  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • ½ cup sun-dried tomatoes chopped
  • 1 cup heavy cream 240 ml
  • ½ cup chicken broth 120 ml
  • ½ cup grated Parmesan cheese 50g
  • 1 teaspoon Italian seasoning
  • ½ teaspoon red pepper flakes optional
  • 1 tablespoon lemon juice 15 ml
  • Salt and pepper to taste
  • 12 oz pasta fettuccine, spaghetti, or penne
  • Fresh basil chopped (for garnish)

Method
 

  1. Cook your pasta of choice according to package directions.
  2. Sauté garlic and sun-dried tomatoes in olive oil until fragrant.
  3. Add cream, broth, and Parmesan to make a smooth, creamy sauce.
  4. Cook your chicken (or tofu for a vegan version) until golden and crispy.
  5. Toss the cooked pasta and protein in the creamy sauce.
  6. Garnish with fresh basil and serve immediately!
