Ingredients
  

  • 12 large shrimp peeled and deveined, with tails on
  • ½ cup crab meat fresh or canned
  • ¼ cup breadcrumbs or gluten-free alternative
  • 2 tablespoons butter melted
  • 2 cloves garlic minced
  • 2 tablespoons fresh parsley chopped
  • 1 tablespoon lemon zest
  • Salt and pepper to taste
  • 1 tablespoon olive oil for drizzling, optional
  • Lemon wedges for garnish

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. Peel and devein the shrimp, leaving the tails on for presentation.
  3. In a bowl, mix together crab meat, breadcrumbs, garlic, parsley, lemon zest, and melted butter.
  4. Stuff each shrimp with the crab mixture, pressing gently to secure.
  5. Arrange the stuffed shrimp on a baking sheet and drizzle with a little more melted butter.
  6. Bake for 15-20 minutes or until the shrimp are cooked through and the stuffing is golden brown.
