Ingredients
  

For the Fried Shrimp:
  • 1 lb medium shrimp peeled and deveined
  • 1 cup all-purpose flour
  • 1 cup panko breadcrumbs
  • 2 large eggs beaten
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • Vegetable oil for frying
For the Slaw:
  • 2 cups shredded cabbage
  • ¼ cup shredded carrots
  • ¼ cup chopped cilantro
  • 2 tbsp lime juice
  • 1 tbsp olive oil
  • Salt and pepper to taste
For the Sauce:
  • ¼ cup mayonnaise
  • 1 tbsp sriracha or hot sauce
  • 1 tbsp lime juice
  • 1 tsp honey
For Serving:
  • 8 small corn or flour tortillas
  • Lime wedges optional

Method
 

Prepare the Slaw:
  1. In a bowl, mix shredded cabbage, carrots, cilantro, lime juice, olive oil, salt, and pepper. Set aside.
Make the Sauce:
  1. Whisk together mayonnaise, sriracha, lime juice, and honey in a small bowl. Refrigerate until ready to serve.
Bread the Shrimp:
  1. Mix flour, garlic powder, paprika, salt, and pepper in a bowl.
  2. Coat shrimp in the flour mixture, dip in beaten eggs, and then coat with panko breadcrumbs.
