  • 1 tablespoon olive oil
  • 3 garlic cloves minced
  • 1 medium onion chopped
  • 2 medium carrots peeled and diced
  • 2 cups chicken broth
  • 1 can 14.5 oz diced tomatoes, drained
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil

Method
 

  1. Sauté the chicken: Heat olive oil in a large skillet over medium heat. Add the chicken pieces and cook for 6-8 minutes, or until browned and cooked through. Remove the chicken from the skillet and set aside.
  2. Sauté the vegetables: In the same skillet, add the garlic and onion, cooking for 2-3 minutes until fragrant and soft. Add the carrots and cook for another 3 minutes.
  3. Combine: Pour in the chicken broth and diced tomatoes, then stir in the oregano, basil, salt, and pepper. Bring to a simmer for 5 minutes, allowing the vegetables to soften.
