Ingredients
  

  • 1 can tuna, drained
  • 2 tbsp Greek yogurt or mayonnaise
  • 1 tsp lemon juice
  • salt and pepper to taste
  • 4-6 slices thin cucumber slices
  • 2 slices whole grain bread
  • 1 tbsp chopped celery (optional)
  • 1 tbsp chopped red onion (optional)
  • fresh dill or parsley (optional)
  • 1 tsp Dijon mustard (optional)

Method
 

  1. In a bowl, add the drained tuna and break it apart with a fork until flaky.

  3. Stir in lemon juice, salt, and pepper. Taste and adjust seasoning.
  4. If using optional ingredients like celery or onion, fold them into the mixture.
  5. Lay bread slices flat and spread the tuna mixture evenly over one slice.
  6. Layer thin cucumber slices on top and press gently to secure.
  7. Close the sandwich, slice if desired, and serve immediately or wrap for later.
